Rib Eye Steaks w/ Roasted Potatoes and Green Salad $3.00 pp

Fry's has Rib Eye Steaks ON SALE for just $3.97 lb. They will cut and wrap them for free. The produce this week looks great. I picked up a bag of Dole Salad, Cucumber and 2 Tomatoes for just $3.00. I had the potatoes in the pantry.

You will need:

•  4-5 Rib Eye Steaks
•  4 Russet Potatoes
•  Favorite Bagged Salad
•  1 Cucumber
•  2 Fresh Tomatoes
From the Pantry
•  2 cloves garlic
•  Balsamic Vinegar
•  Olive Oil
•  Favorite Seasoning
•  Mrs. Dash


#1 To make the simple marinade in small bowl add 2 Tbs. Balsamic Vinegar, 1 tsp. Mrs. Dash seasoning and the pressed garlic and whisk it together. Drizzle in about 2 Tbs. olive oil. Place steaks in gallon reclosable bag and add the marinade. Seal the bag and place in refrigerator.
#2 Pre-heat oven to 400 degrees. Heat BBQ to high. Wash and quarter the potatoes. Place potatoes in lg. microwave safe bowl. Drizzle with olive oil and sprinkle with Mrs. Dash and toss well. Place bowl in a plastic grocery bag and tie the handles. Microwave on high for 5 minutes.
#3 Drain and spread microwaved potatoes across a baking sheet and place into heated oven.
#4 Grill steaks to taste. About 3 minutes on each side twice for a total cooking time of 12 minutes for med-rare.
#5 Remove the salad from the fridge and dress just before serving.
#6 To dress the salad – drizzle 1 Tbs. Balsamic Vinegar, 2 Tbs. Olive Oil and salt and pepper to taste. Toss well and serve. If you have some grated parmesan cheese it’s nice to sprinkle that over the top.
#7 To Serve: Return the potatoes to the bowl that you microwaved them in. Cut the bread and put into a basket. Place the steaks on a platter. Serve everything right on the table “Family Style”.
