The night before: Season chicken well with Emeril�s Seasoning. Pound chicken to about � thickness. Cut into � inch strips. Place in 1 gal. Ziplock. Cover with 1 c. of buttermilk, add 1 clove of garlic and seal. Toss bag gently to coat everything evenly. Place bag in refrigerator. |

The next day: Heat oven to 400 degrees. Place fries in a lg. bowl to begin to thaw. |

Heat lg. non-stick pan to med-hi heat and add 2 Tbs. of olive oil. Pour breadcrumbs in to shallow dish and add � the parmesan cheese and combine. Remove 3-4 pieces of chicken from the bag and dredge through the breadcrumbs and place right into heated pan. |

Drizzle fries with about 2 Tbs. of olive oil. Sprinkle with Italian herbs and fine grated parmesan cheese and toss to coat well. Spread out on a separate baking sheet. |

Place both baking sheets into the heated oven and set timer for 20 min. |

Remove Chicken and place fries on top rack of oven and turn heat to Broil. Broil until crispy, about 2 minutes. |

Serve with tossed green salad and crusty bread. |
